QUITU Culinary Identity is a small, intimate and cozy restaurant, proud of feeling unique. On our plates, native foods have a constant presence, they stand out and express that Culinary Identity that inspires us and gives meaning to what we do.
We value the uniqueness and absolute quality of each of our products, we receive them mainly from farmers and fishermen who still use their hands to cultivate the soil or cast their nets, and from small producers and artisans from the four regions of Ecuador, from whom they We purchase within a framework of sustainability, environmental respect and fair trade.
The Culinary Identity is a cultural expression as authentic as the fabrics, the ceramics or the music. Like them, it remains over time, but it evolves and is perfected.
QUITU's proposal is current and is Haute Cuisine; however, it evokes the memory of that pre-Columbian meeting and exchange site, to which residents of nearby hamlets and communes came with food and knowledge, to share and trade it fairly.
The challenge in our kitchen is to recover that memory that has remained for generations in our preparations and value the flavors of this land located in the center of the world, restoring to our suppliers the pride of almost forgotten trades, which sustain what we are.
